Things I've cooked lately: July 6th edition

I recently ordered the cookbook Veganomicon and have been cooking up a storm!  One of the favorites of Josh and I that I have made so far is braised seitan (a protein made from wheat gluten), kale, brussel sprouts and sundried tomato.  It's so yummy I've made it twice in the last week!  First the traditional way, and then secondly sans sprouts (the coop didnt' have any!) and added tri-color carrots and mushrooms.  Still yummy, but the brussel sprouts really add a great flavor and I will be sure to not skimp on those again!  Pics below :)

with a side of roasted cauliflower.  All veggies
from our weekly veggie delivery! Love it!
